Peach Cobbler

It is the yummiest time of year here in Western Colorado - peach season!

I thought I'd share a couple of our favorite peach cobbler recipes.  This first one was given to me by my mother years ago, and is our favorite.

Peach Cobbler

Mix and put in a 1 1/2 quart casserole dish:  4-6 peaches, peeled and sliced, 1 T. vanilla pudding mix and 1/4 cup brown sugar

For the topping combine: 1/2 cup melted margarine or butter, the remainder of the package of vanilla pudding mix, 2/3 cup flour, 1/2 cup oatmeal, 1/2 cup chopped walnuts, 1/4 cup sugar, 1/2 tsp. salt, and 1 tsp. cinnamon. Mix and crumble onto the top of the peach mixture.  Bake at 350 degrees for 45-50 minutes, until golden brown and bubbly.
